Ingredients
 ½ cup salted butter (1 stick)
 ½ cup monkfruit
 1 tsp vanilla
 2 eggs
 ½ tsp baking soda
 ½ tsp salt
 1 cup almond flour
 ½ cup sugar free/dairy free chocolate chips
 ½ cup pecan pieces

Mix your butter and monkfruit in your standing mixer, ensuring they are well mixed, then add the vanilla and one egg at a time, allow the wet ingredients to mix well for about 5 minutes to allow the monkfruit to mix well.

In a separate bowl mix the almond flour, salt and baking soda.

After wet ingredients are mixed very well, pour the dry ingredients into the wet ingredients, and mix until the batter is a nice brown color and all the dry ingredients are covered, about 2 minutes in the stand mixer.

Mix in your chocolate chips, and pecans, lightly mix about one minute with stand mixer.

Use a medium sized ice cream scoop to scoop out cookies, roll them in a ball and bake for approximately 15 minutes at 350, or until golden brown.

Only bake enough cookies for the week, roll the remaining into balls and freeze them for the next time you need delicious Keto cookies
